Being part of a family that knows not only how to cook Mexican food, but how to cook authentic Mexican food from scratch, I am often asked "how to make that." Things that I have always viewed as simple to make, baffle others. I rarely measure ingredients because I was taught to taste, smell, and eye (or just see) what goes into the dish. My family cooks often and I grew up in the kitchen alongside my aunt as she cooked meals daily from scratch.
There are certain aspects of cooking that require more than just a recipe. For example, when cooking rice, the rice must brown to a specific color for it to produce the correct taste. Not browned enough and it turns out somewhat bland and mushy, browned too much and it tastes just that, kind of burnt. It took me a very long time to learn when the rice was the correct color. I remember standing at the stove stirring the rice and telling my aunt that I thought the rice was the correct color, it took years for my judgement to be correct the first time. For this reason I believe that a videos can be helpful when learning how to cook a dish. A recipe on a paper does not always have all the little details that ensure a dish turns out just right.
My digital pedagogy project will be to showcase how to make authentic Mexican dishes from scratch. I believe that people will be shocked as to just how simple some dishes can be. I acknowledge that there are a variety of dishes that are quite difficult to make, but just as with anything else practice makes cooking seem almost second nature.
